Blackberry pie – quick and easy

Blackberry pie

Are you looking for a quick and easy cake to make? A cake that doesn´t keep you in the kitchen all day? A cake that embraces Autumn? Maybe even give you a chance to use those blackberries you picked on your brisk walk in the wood this morning? Then this blackberry pie is something for you. Using ready-made puff pastry from the store you´re not far away from sitting down by the fire with a cup in one hand and a piece of delicious cake in the other.

Fits the size of a roasting pan sized 26 x 23 x 3 cm

You need:

  • 250 g. puff pastry
  • 100 g. grated marzipan
  • 50 g. finely chopped almonds
  • 300 g. blackberries
  • 1 tbs. sugar
  • 1 dl. milk
  • 1 egg

Butter the roasting pan. Roll out the puff pastry very thin on a floured working surface. Place the pastry in the roasting pan. Make sure it goes up the sides of the roasting pan. Spread a layer of grated marzipan. Then the chopped almonds and finally the blackberries. Scatter the sugar over the blackberries. Whip the egg and milk together. I use a fork. That´s easy. Pour the mixture evenly over the cake. Bake for 25-30 minutes at 250 C.

This is a pie that I very often make using different kinds of berries or fruit. It´s also very delicious with apples. Another Autumn treat.
